Dark rye flour, sunflower seeds, and a deep mahogany crust. Earthy, complex, and built for cheese.
A soft everyday loaf built from five grains. Perfect for toast, sandwiches, and everything in between.
Dimpled, oil-glossed, and perfumed with fresh rosemary. Cut into generous squares for sharing.
02 — Cookies & Macarons
Small bakes with outsized personality.
Butter, patience, and unexpected flavour pairings. Each piece is made entirely by hand, to order — never sitting on a shelf.
Chewy centres, crisp edges, and the warm depth of browned butter with freshly ground cardamom. Dangerous in quantity.
Delicate almond shells filled with rose-water buttercream and a dusting of crushed pistachios. Made in small batches.
Lacey caramel-almond wafers on a dark chocolate base. Thin, brittle, and entirely addictive.
Melt-in-the-mouth shortbread with a nutty sesame depth. Finished with a sprinkle of black sesame seeds.
03 — Pastries & Tarts
Laminated over two days. Worth every hour.
Croissants require patience — they are laminated over two days with cultured butter. Tarts are built to order. Nothing is rushed.

Free-form pastry with a frangipane base and whatever stone fruit is at its best this week. Crisp, jammy, and honest.
A crisp sablé shell, silky sharp lemon curd, and a torched Italian meringue crown. Sharp and sweet in every bite.
A day-old croissant soaked, filled with almond cream, and baked until deeply golden. Topped with flaked almonds.
The Baker
The Hidden Crumb started at my kitchen table in 2024, with a sourdough starter, a Dutch oven, and a stubborn belief that bread deserves better than a supermarket shelf.
Every loaf, tart, and macaron is made to order — never sitting, never compromised. I work with heritage grains, cultured butter, and seasonal produce, because the best ingredients need the least help.
